New Head Chef, Carl Long, steps up to the hot plate at Oundle Mill
We are pleased to announce the appointment of our new Head Chef, Carl Long, who is taking over from Gavin Austin. After a very successful two and a half years, Oundle Mill bids a fond farewell to Gavin who is looking to pursue a new challenge.
The new Head Chef is familiar to the Mill’s loyal guests as he has worked at Oundle Mill for two years as Gavin’s Sous Chef, before being promoted to the new position.
Carl has previously experienced a number of the country’s award winning kitchens and even spent a few months in France developing his culinary skills. He has a great flair and talent for cooking and has successfully entered the prestigious Roux scholarship and reached regional finals.
Carl has worked with some of the most recognised chefs, including three years under Head Chef and owner, Steve Drake, in Michelin starred restaurant Drake’s in Surrey.
Carl is delighted to start his first Head Chef role at the beginning of April, and is keen to further develop the Mill’s menus and build on the great achievements and reputation that the Mill has attained in the past few years.
Carl has said, “This is a great opportunity for me to develop myself as a chef, to improve my style and put my mark on Oundle Mill. I'm in this profession because I love doing what I do, my passion is to cook excellent food, using quality seasonal ingredients, and using local producers whenever possible.”
